Kale Chips









My Favorite CHEAP thing to make
Kale Chips
Wash and remove the stems from a bunch of Kale
Tear into large pieces
Pat Dry
Sprinkle some EVOO on it and mix it up
Lay out on lightly greased pan or stone
Add the flavorings you like
I use cracked pepper and seas salt
Sprinkle on top
Put in a slow oven 225
For a while, depends on the size of your chips, usually 20-30 minutes
I crumble these on top of soups when I serve them yummy

Pasta and Beets








Gluten Free Pasta (or whatever you like)
Boling water
Cook Pasta!
Peel and roast a few beets till they are tender. You can also boil them and use the water to cook the pasta in
Puree your beets however you choose, blender, by hand,
Mix the two together and you have a very healthy colorful dinner!
I sprinkle mine with sea salt and cracked pepper

Chinese Black Rice and Eggplant

Chinese Black Rice (at the co-op for sure)
Cook (it depends how many you are feeding and cook it like any rice)
Sautee eggplant, leave on the skins, scallions, purple Kale, garlic fresh if you have it ( really whatever you have on hand swiss chard is lovely , beet greens) PLAY!
Add cooked rice to sautéed veggies, salt, pepper, another splash of EVOO
This is good hot or room temperature, great way to get the veggies in!

Oven Roasted Squash, Carrot and Ginger

Carrots, Squash (butternut here) sweet potatoes ,fresh ginger , oranges
Slice your veggies up into same size wedges. toss with EVOO , place on a greased sheet
Place in a hot oven and cook at 425 and cook for about 20 minutes until tender.
Remove from oven , grate fresh ginger on top ( lots) squeeze a little oranges juice on and put some oranges slices in ( I drop mine in a skillet for a few minutes to cartelize them! )
Lots of Cracked Pepper as well
